part of any sandwich starts with the bread. Before we
started making our own bread we would get it from wholesale
bakeries. The problem was they have so much product to bake
they have to start at midnight the night before we would get
our sub rolls. Having a in-house bakery gives us the ability
to have a fresh batch of bread ready in about 25 minutes.
At Rubino's Webster we bake our sub
rolls ALL DAY LONG. Cooking with this method sometimes
gets us in trouble later in the day but I would rather
customers wait 5-10 minutes for the best possible product
than serving 8-10 hour old bread.
